Mid Summer Sunday Dinner

Summer tomatoes are the best.  I always look forward to this time of the year as we pick fresh tomatoes every day and have to make lovely salsa, and pasta sauces almost daily.  Today we are making Sunday dinner.  The menu:  Pasta with roasted garlic, tomato, peppers from the garden and fresh basil, roasted cauliflower, and a mixed green salad. 

The Tomato Sauce
4 heads of garlic
10 tomatoes (any ripe variety will do)
1 sprig fresh oregano
1/2 c good olive oil
