Breakfast on the Run

My favorite thing to grab in the morning when I am pressed for time is a cereal bar.  I am really trying to cut down on the amount of processed foods and sugar I consume and I am also trying to  eat a more “vegan” based diet.  I came up with this breakfast bar based on several different recipes I found on line and made a version with the ingredients I had in my pantry.  I am sure you can make this one or use whatever you have on hand.


ALMOND GRANOLA VEGAN BARS
1 Cup Oat Milk
1T Olive Oil
1/2 Cup no sugar added almond  butter
3 dates chopped
3 prunes chopped

3 c rolled oats
1/4 cup raisins
1 c sliced almonds
1T flaxseed meal
1T black sesame seeds
1T white sesame seeds
2T oat bran cereal
1t cinnamon

In a saucepan heat the oat milk and add olive oil, almond butter, dates, and prunes until soft, melted and mix well.

Combine dry ingredients, rolled oats, raisins, almonds, flaxseed meal, sesame seeds, oat bran, cinnamon in a bowl and mix well.  Add liquid mixture and mix well.

Press mixture into an 8×8 pan lined with parchment paper and bake in the oven at 350 for 20 minutes.  Carefull remove from pan and cool completely.  Cut into 16 bars.  

each bar is approx 171 calories, 0 cholesterol, 20.7 carbs, 3.8g fiber, 6.9g sugar, 4.6g protein, 8.5g total fat
